Really Yummy Gluten Free Cookies!

Modified from the back of the Trader Joe's Rolled Oats bag.

Now my family and I are not gluten free, but every once in awhile we have a family member or friend who is, which is why I LOVE this recipe.  It is an overall great cookie with the added bonus of being gluten free if you need that.

I will caution you that it is NOT peanut free, chocolate free or egg free.  They are also easy to indulge in and hard to put down! Consider yourself warned.

1/4 cup butter
1 1/4 tsp baking soda
1/4 c sugar
3 cups rolled oats
1/4 c brown sugar
6 oz mini m&ms
2 eggs
1 tsp vanilla
1 cup crunchy peanut butter

Preheat oven to 350.  In a bowl, combine sugar, brown sugar, butter and beat until creamy.  Add eggs, vanilla and baking soda and mix well.  Add peanut butter and mix.  Stir in oats and chocolate.  Place teaspoon full of dough on parchment paper lined cookie sheet. Bake 10-12 min until lightly brown on the edges.

makes approx 48 cookies.

modifications: you can add raisins, nuts or coconut.  Whatever makes you happy, just throw it in there!
